Despite being quite intensive, the rains from the beginning to the mid-season provided good nutrition for the plants, ensuring good quantity and quality of production.\u003c\/p\u003e\n\u003cp class=\"preFlex flexIn\" data-mce-fragment=\"1\"\u003eAn extremely dry end of the season, with hot days and cool nights, allowed the perfect maturation and drying of our coffee, keeping both sugar and acidity high.\u003c\/p\u003e\n\u003cp class=\"preFlex flexIn\" data-mce-fragment=\"1\"\u003eFor the past years they have been improving fermentation and drying methods to better maintain the aromas and taste from the cherries, while exploring different profiles. In 2000, Las Lajas became one of the first farms in Costa Rica to receive organic certification, although their commitment to organic practices began much earlier. This shift was deeply personal for the family and has since become central to the identity of the farm.\u003c\/p\u003e\n\u003cp\u003eLas Lajas is known for its diverse and carefully managed production. Across the farm’s 38 hectares, different parcels are shaped by shade trees, microclimates, and varied processing methods, allowing Oscar and Francisca to create distinct coffees with a strong sense of place.\u003c\/p\u003e\n\u003cp\u003eBlack Diamond is one of Las Lajas’ signature natural processes. Only fully ripe, hand-picked cherries are selected, harvested when they reach a high level of sweetness. After picking, the cherries are cleaned, separated, and sorted to remove defects before being slowly dried in a greenhouse patio for 22 to 30 days, depending on the conditions. The coffee is then rested in a temperature-controlled warehouse for at least 60 days, allowing the moisture to stabilise and the flavour profile to develop before final milling, classification, and packaging.\u003c\/p\u003e\n\u003cp\u003eThis coffee marks Swerl’s third year working with Las Lajas. Around 50 smallholder farmers contribute ripe cherries to this station. Once picked at peak ripeness, the cherries are promptly delivered for processing. They are first floated in cool, clean water to remove any defects, then depulped and washed. A 48-hour fermentation follows, after which the coffee is spread out to dry on raised beds. These beds are carefully positioned to maximize airflow while minimizing direct sunlight. Drying typically takes around 21 days, or until the beans reach a moisture content of 12%.\u003c\/p\u003e\n\u003cp\u003eThis particular lot comes from what producers in Ethiopia refer to as a “Premium” preparation. The cherries are selectively harvested from a small group of farmers and carefully sorted: approximately 90% are perfectly ripe, with 5% semi-ripe and 5% slightly overripe. He works full time in his farm assisted by his able children who completed their primary education but couldn’t find work in nearby towns.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eMr Bekele, who is the father of 11 children, fully relied on the income he generated from his coffee farm. The coffee farm business also supports his two elder married sons who  work with him. Mr Bekele Gemeda was incredibly grateful to see the care he has put into his coffee show enough quality in the cup to have his coffee kept separate, something that is rare in Ethiopia. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eBekele and his family were elated when all their hard work striving for quality paid off, being designated to be sold as a single lot under his name. Tree-planting and water management initiatives support long-term environmental resilience.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eNatural processing at Kiawamururu Washing Station follows the traditional Ethiopian-style dry process, adapted to Kenya's climate and quality standards. Since Kenyan factories are primarily built for washed coffees, natural lots are produced in small volumes with careful selection and monitoring.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eOnly fully ripe, deep-red cherries are hand-picked by smallholder farmers. At the washing station, cherries are hand-sorted. Some producers also use flotation tanks—healthy, dense cherries sink, while low-density \"floaters\" are removed. Cherries are then dried on raised African beds for 20-30 days (depending on weather) until moisture content is at 10-12%. During drying cherries are turned multiple times per day, covered during the hottest hours of the day and protected from rain via plastic sheets to avoid increases in moisture.  Once dried, cherries are stored in warehouses giving time to stabilize before milling.
